Meat Kebab
INGREDIENTS
Proportions for ten
skewers: - 1 kilo of meat taken in the net or the leg of
sheep - 1 large very fine bunch of parsley chopped - 2 white kidneys -
1 small onion chopped very finely - 2 kidneys coated with their grease
- salt
Method
To mix salt and
parsley chopped by rubbing them with the palm of the hand on the
table. To cut the meat, the kidneys and their grease in small
cubic pieces of 2 side cm approximately. Debarrasser white
kidneys of their pocket. To make seize quickly, threaded on a
pin, charcoal. To carefully mix the whole with parsley chopped
already salted and chopped onion. To thread in the pins ten
pieces by intercalating 2 pieces of meat for a piece of grease.
To roast then on charcoal (embers being consumed) and to be
useful at once.
